Ingredients
- 1 cup quinoa
- 2 cups water
- 1 red bell pepper
- 1 zucchini
- 1 cup cherry tomatoes
- 1 carrot
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 2 cups spinach
- 1 avocado
- 1/2 cup feta cheese
- 1 lemon
Instructions
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Rinse the quinoa under cold water. Combine it with 2 cups of water in a medium saucepan. Bring to a boil, then reduce heat to simmer. Cover and cook for 15 minutes or until the water is absorbed.
